Foreign travelers are often stunned to hear that one of Turkey’s most famous desserts contains cheese. Cheese in a dessert? At first, it may seem unusual—but when warm, stretchy cheese meets crisp kataifi and sweet syrup, it creates an unforgettable culinary masterpiece.
How Is It Made?
Butter-drenched kataifi strands are layered in a copper tray, a special unsalted cheese is placed in the center, then covered with more kataifi and baked until both sides turn a deep, pomegranate-red hue. Finally, boiling syrup is poured over the top, melting the cheese into perfect harmony.
The Origin Story and the Fun Truth Behind the Name
Historians trace knafeh’s roots to ancient Arabic medical texts and the Levant region, where rulers were said to eat it during Ramadan to maintain their energy levels. Technically, your ancestors may have consumed this cheesy pastry as a form of medicine!
