Many travel lovers and food enthusiasts know İçli Köfte in its crispy fried form. However, in the Eastern and Southeastern Anatolia recipes, the boiled method holds a very special place:

Boiled İçli Köfte: A finely opened bulgur dough is cooked in boiling salted water. This method gives the dough a cotton‑like light and soft texture. When served, hot butter and a tomato‑paste pepper sauce are drizzled over it.

Fried İçli Köfte: The prepared meatballs are cooked in hot deep oil. The outer crust becomes very crunchy, while the filling stays juicy and spiced.

The secret to an authentic boiled İçli Köfte lies in the thinness of the outer dough and the balance of spices in the filling:

1. Outer Bulgur Dough: Fine bulgur for köfte, semolina, special spices, and a small amount of flour are kneaded for a long time to achieve a smooth consistency.

2. Traditional Filling: High‑quality minced meat that has been passed through a meat grinder or finely chopped; it is sautéed with plenty of onion, butter, walnut pieces, black pepper and cumin. The mixture is then placed inside the dough and shaped into a ball.

Traditional boiled İçli Köfte is not eaten plain. The hot butter and spicy chili sauce poured over the freshly boiled meatballs coats the outer surface, adding flavor. It is recommended to enjoy it with a freshly brewed cup of Turkish tea, ice‑cold ayran, or a spicy turnip juice.
